Is this possible or is wifi tethering the only option? I have 1Gb that I need to finish by tomorrow so would like to use my iPhone as a modem.

possible. under the personal hotspot area it will work with USB too

Is there any set up on iTunes? Will the speed using USB or wifi be the same? If it is then I'll just use wifi.

not sure actually. guess you can do a speed test to check each option.
