Ok, so we found some apps to help forward sms's delete single sms's and save and store sms's. They are

We-iSMS
I have an unlocked phone running software 2.1 updated it on Saturday after I bought the phone.
Can anyone assist me in installing these apps correctly as I have no idea where to start or even how to get them onto the iPhone!

Those apps you mentioned above don't exist anymore on firmware 2.1. They were from the 1.1.x days.. Lovely apps, especially weTool - pity they still haven't been ported.

Make sure you have iTunes 8 and the original firmware file from Apple. You can get this by updating in iTunes or downloading the file.
If you ever want to go back to an non-jailbroken phone, simply restore your iPhone in iTunes and it will restore an original firmware without any jailbreak.
No delivery reports, and i'm not quite sure I understand what you mean by saving messages and conversations...
Once you have jailbroken your iPhone, there is an app called Cydia. Open that, update all the necessary updates and look for an app called biteSMS.
This app allows you to forward SMSs and delete individual ones.
In Cydia, you will also find an app called SwirlyMMS - this allows you to send/receive MMS...
