iPod video conversion software

I need a program that can convert all formats of video to .mpeg (or whatever it is) in the correct size etc for iPod Touch. I have DVD Fab Platinum which converts DVD's but it doesn't work for normal video files.

Anyone reccomend anything? Freeware or otherwise.

Also iPod related; I want to jailbreak this thing but the warrentee will be invalid if I do (I assume), so in the case of needing repairs, is there any way of 'un-jailbreaking' it and restoring the original firmware?

And while on the subject, anyone have a guide on how I go about jailbreaking and any good apps etc?

I currently use Xilisoft Video Converter Ultimate - gave the trial a bash and it worked great, so bought a retail copy from them - US$55

Got that sorted, now just the issue of jailbreaking.
