Go to System preferences, international. My guess is your chinese is above English, and iTunes picks this up. Drag English to the top. If it is already at the top, I have no idea

shift+command+4 will give you a crosshair to drag around what you want captured. To make like easier change the default save as file type to jpg.
How you might ask - and even if you didnt- open up terminal and type in
obv you can change the jpg to represent the file type you prefer egCode:sudo defaults write com.apple.screencapture type jpgCode:defaults write com.apple.screencapture type pdf
