Is it possible to make iTunes a DLNA server ... maybe a plugin or something?

Not itunes itself, but you can tell most DLNA servers to look at the iTunes folder.

Yeah the best u can do with iTunes is home sharing but that's specific to Apple products if I'm not mistaken.

Home sharing is daap protocol, if I'm not mistaken. If I remember correctly, XBMC can connect to it.
