Lamb spit braai...

We are spit braaing a lamb on Friday...lamb was just delivered and the spit...it's one of those spits that we have to put the lamb on spread eagle (for lack of a better description).

We haven't done this before so any handy tips...marinades...meat rubs etc etc..we have no idea on the weight on the lamb so what would be a safe braai time? Husband thinks along 6 hours?. Thanks so much in advance.

Dunno if they'd help, but why not call one of those caterers that offer lamb on the spit and see if they'd share some advice?
 
I own a gas spit and have cooked a few lambs, pigs, wart hogs etc.
What i normally do is drill a 4mm hole in a 500ml buddy bottle lid and put the marinade in there, that makes it a lot easier to splash on the marinade .
Olive oil is normally my base for a marinade to splash on, worcester sauce and water added and what ever else you think will taste nice that is available.
No need to put marinade in the first 45 minutes as the lamb is still heating up .
What spit are you going to use charcoal or gas ? .

Common ingredients:
Lemon
Coarse sea salt
Ground black pepper
Rosemary
Thyme
Basil
Garlic
Olive oil
Red wine

Some people like lots of garlic but I prefer to use only a little bit as it's not everybodies cup of tea.

You can inject a blended mixture of red wine, herbs, garlic into the meat. You will need a big syringe and very thick needle, try the vet or chemist for a 6 or 7 gauge needle.

the spice mix with lemon juice injected all over will make that lamb soft, tender and ridiculously delicious.
 
Thanks FNfal, it's a normal braai thingie and quite a contraption, manual...was gifted to us as a favor for our event so we not complaining...husband has estimated to turn it every 15 minutes haha (good god, hope the bottle stores are sold out of whiskey on the day else this may be the disaster of the century haha)...

@ponder, yep, been watching YouTube videos the entire morning so we had the the list to buy lemons, Rosemary, garlic fresh, coarse salt and crushed pepper....I've bought all this stuff so long....as well as olive oil, charcoal, not briquettes...as a basting it's been recommended jimmys and bq spice for last hour, we love jimmys but fark, seen some YouTube vids where the lamb is engulfed in flames and we don't want that happening, would rather make it a slow labour of love with no crisp burnt black outside.

Timber, husband was also quite surprised to see the lemon with lamb, he never thought it was a good combination but seems we might have found the holy grail lol. Everyone recommending it.
 
Oh Yar and ponder, my husband would have a mild heart attack if anyone so much as suggest coke on his braai food hehe. Not done..never seen it in all our married years.

I had the coke injected lamb spit before and it's disgusting. They used coke because the one person was a on the wagon alcoholic. They could have just left out the wine used only lemon juice.instead of coke.

I would not put those bottled sauces on there, the natural stuff you have there is much better.

The lemon works really well, it's used a lot in greek cooking and greek lamb dishes taste great.

Depending on what kind of coke you are referring to, that could have been one hell of a party.
 
I would gobwith the following:

Inject the lamb with the lemon, wine and herb mixture beforehand. Then use the same mixture with added olive oil to baste with during the braai process using either a basting brush or the coke bottel for application. During the last 30 minutes or so I would add Jimmys or Lappies to the mix and baste liberally with that. It adds a bit of sweetness which is nice. Do not drench everything in it though.

The guys like Spit Braai King cut the lamb off the carcass and then drench everything with Lappies sauce. Its nice, but you only taste the lappies. Guarenteed to make it taste nice, but not necessarily great.
