Lemon Meringue / Lemon Bars

The Mugg & Bean lemon meringues are too sweet (and too large!). It needs to be tangier than the way they make it.
 
Anyone here ever tasted real Key Lime Pie? Oh. Wow. I will move to Florida for that.

And Food Lovers in Nicholway makes a Lemon Meringue Muffin.
Picture a oversize muffin, made with a crusty dough, with the center hollowed out, filled with lemon curd and topped with Meringue so tall you can't close the box it comes in. I'll get you guys a photo of one. :)

Me FAve. But you have to have west indian key limes.
 
Well this is how NOT to make a lemon meringue...

Baby woke up and I forgot about the meringue in the oven. Until I saw the smoke creeping into the living room :eek:

Hmmm. Smoked lemon meringue pie.

You could sell it to some Sandton housewives at a massive premium...
