"Lemos" and "Lemos Flavoured" - what's the diffs?

My family is a major consumer of squashes (beverage). For some years we've preferred Lemos to Oros, and there's always a 2-litre bottle near the fridge. In the past while the pale green-gray stuff inside the Lemos plastic bottles has taken on brownish tinge. I thought it was a bad batch and raised it with the local PnP, but they assure me it's the latest squash.

It also doesn't seem to taste the same as the genuine Lemos I remember.

I checked the label on the bottle. Now it says "OROS Lemos Flavoured" not just "Lemos" as I seem to recall.

I called the Tiger Brands Consumer Line, but they referred me to the Posion Centre and then hung up (it was a computer).

Anyone know what's going on? Can one still get the real genuine old-style LEMOS?

I can't help you with the Lemos stuff as I don't drink the stuff, nor other concentrates for that matter, but the mustard issue is probably them using less mustard powder, more water, and more wheat flour.

I prefer to make my own mustard as it is dirt cheap and easy. Just buy mustard seeds; roast; combine with vinegar, sugar, salt and blitz. Additionally, buying mustard powder would be a better course of action than the pre-made stuff. Simply add cold water to the powder and you can control the concentration yourself. It also last just as long as the pre-mixed stuff...

If you're going to make your own then just remember to temper with water as and when needed. Mustard is a natural emulsifier and stabiliser so will accept plenty of water without splitting. The fact that manufacturers are adding xanthan gum is intriguing as there is little need for pseudoplasticity in mustard products, so one can only assume that they are cutting down the mustard content quite considerably. I really don't believe that there would be a need for xanthan gum if they weren't.

It appears that if you want proper mustard, you either have to make your own, or fork out obscene amounts of money for the luxury. I don't believe that paying R60 for 100g of dijon mustard is even remotely worth it. Mustard seeds are dirt cheap, as is mustard powder...

EDIT: another tip - make mustard in large quantities. It doesn't turn rancid very easily whatsoever, in fact it has a helluva long shelf life, and making it in large quantities makes blitzing it far easier...

I'll also explain the science behind it if you like? Has to be cold liquid, why it emulsifies water etc...

Arthur, we also enjoyed the Lemos concentrate and no longer buy the OROS Lemos flavoured concentrate for the same reasons you mentioned.
