What info do I need to get numberplates for a car? Do I just pitch up to a road traffic department and fill in a form?

If your car has a license already the numberplate info should be included on there. Then you need to find people who make numberplates. As far as I know the traffic dept don't make numberplates. The roadworthy places near me makes the numberplates. You just hand them the car license which they use to get the info.

I pitched up at a Midas and asked them to make a custom number plate for my son when we left the country. They required no paperwork or anything.

Your question is not clear what you need?
If it is just new plates you need Midas or any specialized numberplate shop will do it. Some will require either the registration paper or newly renewed license certificate.
If you need plates for a new used car you will need all the paperwork like road worthily certificate change of ownership form completed by you and the previous owner. Registration certificate in the name of the previous own and a SAPS clearance certificate. You will then be able to register the car in your name and be issued with new lienee plate numbers if it is registered in a different province to where is was originally registered.
A new car the garage will complete the paperwork and register the car for you.

I need to register a new car and get plates for it. It has a temporary permit. The dealership didn't do it because they aren't in my province.

The dealer should have supplied you with all the necessary paperwork required to register and license the car. Take it to your local licensing office and they will help you to complete the registration.
