So I've been fiddling around with this for a day or two now, but it's a little bit beyond my ken.

Any services where a small office could get their domain moved over, and mails moved into the cloud? Most important needs here are synced calendars, the use of MS Teams for scheduling, and the ability to work on various Office documents collaboratively.

Help.

Good morning,

Have you had a look at using Exchange online Plan 1 for emails? It's very easy to set up. but it sounds like you need Office 365 Business Essentials.

We are currently using an Office 365 Business plan, and I have just activated an Office 365 E3 Trial. I've set up a sub-domain on our external domain, and added that to office to test with.

At this point, I've successfully set up an email account, and imported my current PST into this new account. The issue I now cannot figure out, is how to set owner permissions for all my subfolders (hundreds), so that the folders sync online. I can do it one by one, but that is absolutely not going to be practical.

At this point, I'm just messing around to see how this all works, but it's above my paygrade - Once I've got company buy-in, I will enlist the help of an expert to set it all up and do the migration properly.

@copacetic
Check out Data Migration in the 365 Admin Center.
It has the ability to migrate an entire domain of emails easily.
That is how I migrated my company of approx 450 mailboxes.
I recommend that you read up on Microsoft's docs regarding this.

Good Luck

EDIT:
For Collaboration on documents check out SharePoint, it can easily replace a file server. (For Microsoft docs).
Teams is awesome, all the Microsoft software integrates seamlessly together.

If I am not mistaken, you can make use of Azure active directory to accomplish this...?

Teams was in fact the catalyst for all this, and I soon realised that having everything working together would be a tremendous help. This led to my next move, being setting up exchange to have access to the meeting scheduler, etc. I've also set up a Sharepoint site for the current team and after some fiddling have that library syncing in Onedrive.

I have taken a look at the various docs and what I did eventually do was this:

Link.

The problem is that while I can change the permission to 'owner' on a per-folder basis (from within Outlook Online), I cannot figure out how to apply this to all folders at once.

I phoned Microsoft, they were utterly confused, and said they'd call me back and did not.

I have almost no idea what I am doing though, it must be said. Just about everything I know about this entire ecosystem I've learnt in the past two days. :p

And seriously, if anyone can recommend someone to handle this process, that would be ideal. I'm happy to fiddle, but I want the actual migration handled by a professional.

Not sure what you mean? Different outlook folder permissions?

Word of advice, if you have very large document libraries, dont use the onedrive sync agent.
It has caused me endless headaches with cashing and failed syncs.
Rather have users open files directly from the web interface.
