if i purchase ETH on Luno, which wallet is used? is that only set up after the purchase? does Metamask's wallet work?

When you make your first ETH buy through Luno, it will prompt you to create a wallet inside the App/Web. Same with BTC etc.

Keep in mind that LUNO wallets are non custodial and LUNO still owns the crypto until you send it to a custodial wallet away from their exchange

An exchange wallet address is like a database entry

Your coins are in their wallet
They have it in their possesion

They just have it on a ledger that you are owed. X amount

Exactly like when your money is in the bank

false, sure they have a lot of shitcoins that is not even traded on their exchange, just a white-labelled experience from someone else, BUT for their actual selection you can look at what is paired with ZAR ... 11 coins paired with ZAR:
