A mac and cheese recipe calls for 450g mozzarella, 225g cheddar, and 450g Colby Jack. The first two are covered but I'm lost on what to substitute for Colby Jack. It's supposedly a mix of Colby and Montgomery Jack, both of which are mild cheeses and melt well. What can I use as substitutes? Ideally something local instead of imported as I don't want to spend a lot. Thanks
