Macaroni & Cheese - how do you make yours?

I like a white sauce where the milk is first infused with whole black pepper corns, carrots, celery and a few whole spices - it adds much more flavour to the sauce. I never ever buy a ready made white sauce - they never taste good - ever! And it really is simple to make a white sauce.

Mac and Cheese is one of my all time favourites. Try adding grated nutmeg to the cheese sauce as well. And dont just stick to one cheese. I have made a blue cheese macaroni with walnuts and spring onions as well - very nice! Try adding breadcrumbs to the topping as well for a crunchy cheese topping. Bacon, mince, tomatoes, onions, spring onions, tomatoes, steak strips (change the pasta if you use steak strips) etc all taste great.
 
thats why putting mince in mac and cheese just ain't on :p

are you fscking insane, thats like eating a pepper steak pie without the steak, a hotdog with no worsie, ribs without the sauce - i can go on and on dude... macoroni with ONLY chees tastes crap - you need da Mince man!
 
No you don't need the mince Keeper. Thats why it is called Macaroni and Cheese. Not Macaroni, Mince and Cheese (which is what you are eating).

If you think Mac and Cheese tastes kark on its own, then your mother needed a cooking school...
 
Crushed Fritos mixed with a little grated cheese for the topping ....... is the most amazing topping ever ;):D
 
Too much cheese in the sauce will result in a grainy texture when it comes out of the oven as the sauce will boil - add enough cheese to flavour the sauce but rather add cheese layers instead and a good helping on the topping. Grainy sauce FTL...

Ya I once made some cheese sauce and it boiled on the stove and curdled ewww...
 
Also adding the cheese too quickly will result in a grainy texture - add it in small handfuls at a time...
 
although .............. not for Mac and cheese obviously but sometimes an overload of cheese is cool on chow when drunk ;) Remember using a whole block of cheese and 250ml of cream to make a sauce for my steak ..... just melted the cheese in the steak pan and added the cream .... omg, delicious :D
 
Meph dude an overload of cheese is good all the time, it just seems better when your drunk because lets be honest every drunk meal is about the best food ever :).
 
I tend to only eat when I am drunk. Or is it that I am just drunk all the time? Ah fsck it, regardless - eating when pissed is one of life's great pleasures! Bimbos Bimbozinis FTW!!!
