Macbook suddenly slow - help?

As above, about a month old so not going to play with internals, bar HDD & RAM.

Nice idea though, I didn't know that but sounds pretty cool.
I don't blame you then. Removing the CD/DVD isn't particularly difficult but it does come with some risks. You might consider one of Seagates SSHD hybrid drives. Basically they're a HDD with up to 32gb of SSD built in. I used one while I was waiting for the warranty to expire before adding a SSD to the mix and creating the fusiondrive.

I haven't. It's about a month old so I refuse on principal. I think it is more a hardware-is-slow issue more than anything else.

Then try this:

Close Applications

Mac OS X likes to leave applications running in the dock. Even clicking the red “X” button on an application window won’t close it — it’ll remain running in the background. In most cases, this isn’t a big problem. However, if your Mac appears to be running slowly, you may want to close some of these applications.

Look for the applications marked with a dot on your dock, right-click or Ctrl-click their icons, and select “Quit.”

Sorry, not read this fully, but try running OnyX...Titanium Software..it's free.

What about a 1TB 7200RPM drive?

MacOS is a very lightweight OS so a HDD would be fine.

Have you formatted and installed 10.12 from scratch?
Are you smoking something!?
7200 drive will make just about zero difference, "upgrading" to that will be an exercise n futility.
There's another way... how much longer on the warranty?

What I did with mine was replace the SuperDrive with a caddy. Installed the SSD in the caddy and married it to the HDD creating what apple refers to as a FusionDrive. You end up with a single large virtual drive with both the speed of the SSD and the storage capacity of the HDD.
This is the best answer but failing this I'd buy a 64gb SanDisk cruzer fit usb 3 drive(those tiny flash drives that don't stick out) for a little bit extra storage space if 256gb is to small, even if bought out of your own pocket, you can just unplug it if you leave the company.

You saying there is no difference speed wise between 5400 and 7200RPM?

Technically yes there is but its virtually unnoticeable in everyday use, been there done that, never mind the 7200 guzzles battery life.

That's like advising someone to get a faster fax machine when they could just rather use email..

Good advice about the RAM/SSD - but what software have you installed? Plenty of files? Could be Spotlight running indexing in the background, if plenty has been added?

Do you use the Photos app?

I'm running on a 2012 MBP too

2,3 GHz Intel Core i7
16 GB 1600 MHz DDR3
NVIDIA GeForce GT 650M 512 MB
Intel HD Graphics 4000 1536 MB

It used to feel sluggish too after a while especially when the HDD drive was getting full so I swapped out the HDD to a SSD and it's been running so smoothly ever since... SSD is your answer and maybe bump up the ram a bit

Sorry for the delay, only saw this now.

I use photos only very rarely. I'll check out Spotlight, possibly it is indexing.

Thanks for the info :)

Had an issue with Sierra, draining my battery and eating resource impacting performance. One of the system processes were running flat out, was called - "secd", go to Activity Mon and see if this processes is hogging resource. If you do some searching around secd killing your resources, you'll find guides to get it to reset and behave. Had something to do with the password chains on my machine...
