I'm looking at upgrading the RAM from 2GB to 4GB. The unit currently has 1067MHz DDR3 - will 2x APACER 2GB DDR3 1066MHZ SODIMM PC3-8500 work?

Yep... Most good quality DDR3 SODIMM RAM will work on your Macbook.
