Mail.app without adding to Address book

This is sort of difficult to explain but I'll try:

When I get an email from someone and I want to email that person without "replying." How do I get the address to autocomplete?

Do I HAVE TO add it to Address Book manually before it will be recognized by mail.app?

There is a drop down menu to the right of the From address - you'll see a few options including add to address book and new message.

The person that's switched to mail.app were used to Outlook. In Outlook there's apparently a list in the bottom left corner of all the email addresses that's in your mailbox. He usually just double clicked on an address and wrote a new mail.

What he/I wants is that if he know the person emailed him before, he should be able to type in the first couple of letters of the email address and it should autocomplete. (or even by typing the persons name)

The way it seems to work is, once you SEND someone an email it puts it in "memory". It does not store email addresses if you only received an email.

Is there a reason he switched to mail.app? I don't use Outlook but I know many who do and they love it.
 
Switched to OSX. :) Does not have Outlook anymore. Retired. :)
 
I'm not sure I understand your problem, but if you hover your cursor over the From: address and click on the little triangle that appears, you get the opportunity to copy that address to the clipboard.

Once you've sent an email to an address, it gets saved in a separate buffer for autocomplete purposes even if it is not in the Address Book. To see that buffer, in Mail, choose "Window | Previous Recipients" from the Menu.
