Matched Memory Pairs

What is the difference between using factory-matched RAM modules (i.e. those sold as a matching pair) and using two separately bought RAM modules that are the same (i.e. two of the same part, but bought separately)?

I have noticed that it is, in many cases, much more expensive to buy a matched pair than to buy two of the same module separately and am wondering why this is the case.
 
It takes extra time and money to test the RAM pair for optimal speeds.
