Meat loss when having a whole lamb cut up?

What is the avg loss when one takes a 17kg lamb carcass and cut it up into (chops, ribs, potjie meat, including the trimmings and kidneys, fat etc?

As far as I know you will loose on shavings|"saagsels" as they call it, but anything else?

Always wonder what the loss is vs the carcass weight. Anyone ever done a before and after at their local?
 
I don't buy whole (or half) carcasses often, but when I do I stand and watch them the entire time!

OK, that doesn't answer your question becasue I don't know the answer :)
 
A good question.

Last time we got a whole lamb/sheep at Food Lover's, they weighed it before starting to cut it up.

Then we asked for all the "off cuts", which we went through at home and ended up using all the "spek" for home made boerewors and most of the other meat off cuts for dogfood. Remember the "off cut" packet being quite heavy, certainly approaching 1 kg.

The 1kg remark is pointless if you don't tell us the weight of the thing before cutting started.
 
@daniellgr: The "off cut" packet you refer to, is that the fat, kidneys, etc? This you usually do get with when you have it cut up.
OR is it the "saagsels"\shavings which stick to the cutting blades which you are referring to? This looks like mince and often sold as "pets mince".

The shavings\mince is the only thing where I can think of getting real loss as everything else should be in the "off cuts" bag.

No, the kidneys, liver etc, was packed separately. The off cut packet had bones and bits of meat etc rimmed off the other cuts in it. The "saagsels" was not part of it.
