Here is two ROMS that come highly recommended, the first being the one that set the pace for all other to follow:
Dexter's Froyo 2.2.1

And the one I'm testing atm:
khalpowers' ROM

The latter has some mayor improvements like SWAP enabled kernel (the reason I'm testing it) and a lot of little tweaks to keep your phone lightning fast.
I have now used it for only a couple of minutes and already I can see a huge improvement speed wise.

The default theme is horendous, but there is a few themes that will work on this kernel, like on page 47.

I'll keep this thread updated should there be any more mayor developments.

After the second ROM, yes.

The default stock phone is very limiting with android 2.1 and no "app2sd" option, so you have a useless 8Gb sd card, but the second ROM I mentioned enables swap (very fast response time) and app2ext forcing ALL apps to the SD card freeing up tons of RAM.

The phone itself is a beauty, only the stock ROM that needs to be removed.

It has been a while since I updated this thread, and a lot has changed. This phone is now considered old by many but thankfully it is still huge in Korea which keeps it alive and kicking.

Latest ROMS:
Stock firmware to RDS or SBF:

Rom I'm using now, CyanogenMod 6.3.0:

Other Roms:
XDA Special: http://forum.xda-developers.com/showthread.php?t=1177020
Wanhu's rom: http://forum.xda-developers.com/showthread.php?t=1151289
Wanhu optemized: http://forum.xda-developers.com/showthread.php?t=1160867
CM7: http://forum.xda-developers.com/showthread.php?t=1227835

The last one, CM7, has given me some trouble and I'll try it again later this week.

Development has certainly picked up on the XT720 front!

Here is another few ROMS to consider:
The one I just finished installing:
CyanogenMod 7.1.0
It is slated as beta still but the updates have been coming in fast and furiously!

Then there is another CyanogenMod 7 ROM:

The other ROMS seems a bit unstable atm, but finally we have Gingerbread on the XT720!

Just remember to flash a stock sbf file (Android 2.1) and then update the ROM. If someone wants to know how to do this then just ask, it is as easy as pie!
:D

Here is the default ICS installation screenshots, pretty awesome and snappy even on this oldish phone:
