Montery Jack / Pepper Jack Cheese

Tough to get here because afaik the Americans don't export their cheeses very much, nor do they allow imported cheeses, hence why they sell their own crap.
I personally don't mind monterey jack, but it's really nothing special at all. It's just a cheap, everyday cheese.
It's not really like cheddar, mostly because cheddaring is actually a process. You have to cheddar cheese to make cheddar, and while the processes are similar, they're probably not the same at all. In my experience Monterey Jack resembles a gouda more than a cheddar...
