For Skype I just set my computer to Stereo Mix and call, for bout 5 - 15 seconds at the start of the call, the person you called can hear themselves, but then goes away. You can use any program to then record the strereo mix stream.. audacity is a good opensource answer.

I've used free a program called " Scanner recorder" & "Recordpad Sound recorder" and both are simple and work fine.
