I signed up for this the other day, I thought it was like the Anytime 100.

Is it possible to switch to anytime 100 on the same package at the same price?

Or, can I change the Mychoice so that I'm charged out-of-bundle rates when my allotted minutes are finished instead of reloading airtime?

What is the problem? The MyChoice is a newer contract, and cheaper out of bundle rates than the AnyTime. I'm sure that MyChoice does not require you to load airtime, and will happily go out of bundle for you.
