Need PDF converter for cPanel server running on CentOS 7.7

Any suggestions welcome.

We running a dedicated cPanel server running on CentOS 7.7 for a elearning site with Moodle installed.

Ghost scrip - Lots of problems, dont always convert the documents to PDF.
Third party sites like google drive work, but as soon as the server is too busy, or something happens the file does not always return during the conversion, so you always get like 5% of the learner submissions that was not converted to PDF.

Is there any other PDF product that anyone can suggest that we can run on the server to do local conversions, other that Ghost scrip.

You can also run Libre Office in headless mode. Document conversion is one of the use cases for this.

I'd look at docker based solutions. Less headache, quite of a lot of the ghost pdf type stuff is invasive.
