Nice things to make with fresh Mint?

My mint plants are growing out of control so I have more mint than I can normally use.
What can you make with fresh Mint, ideally something I can eat?
Apart from garnish for drinks I'm not sure you can make any drinks with Mint being the main ingredient.
 
Frozen bananas into a blender with milk, cocoa powder & mint...or just added to any smoothie.
You could dry it and make tea with it later.
 
Mint julep is an alcoholic cocktail, consisting primarily of bourbon, sugar, water, crushed or shaved ice, and fresh mint. As a bourbon-based cocktail, it is associated with the American South and the cuisine of the Southern United States in general, in particular as a symbol of the Kentucky Derby.

Main alcohol: Bourbon

Ingredients: 1 teaspoon Powdered sugar, 2 oz. (56.7 ml) Bourbon whiskey, 2 teaspoons Water, 4 Mint leaves

Preparation: In a highball glass gently muddle the mint, sugar and water. Fill the glass with cracked ice, add Bourbon and stir well until the glass is well frosted. Garnish with a mint sprig.

Served: On the rocks; poured over ice

Standard garnish: Mint sprig

Drinkware: Highball glass

Base spirit: Bourbon whiskey

Mint chutney and use it as a dip or a condiment.
 
Roast chicken, lamb or beef goes well with mint or a mint sauce.

Brownies and various other deserts as well.
 
Tzatziki

Double cream yoghurt
Chopped mint leaves
Chopped garlic
Salt and pepper
(Refrigerate while the flavours mingle - not essential but advisable) then add VERY thinly sliced cucumber.

Enjoy!

Make mint (pudina) chutney.

You'll need mint / roasted peanuts / coriander leaves / fresh green and red chillies / salt and black pepper powder + cumin (jeera) powder to taste. Don't add yoghurt - it makes it taste funny.

Just blend it until it is a thick consistency. Don't overblend it though or it will taste slightly bitter.

It should look something like this then you know it's done -

For the tzatziki you only use mint leaves, not the stalks. I've edited my post #11.

What do you mean by stalks, I thought you only ever use the leaves in any recipe requiring fresh mint?
 
I think the problem is all these recipes you use a lot of stuff but only a small amount of the mint leaves.

I also have plentiful mint. Some of the things I make not mentioned above and a bit of heuristics :

• Mint Leaves Tea
• Mojito (Mint leaves, lemon juice, sugar and soda water)
• Infused Water (Mint leaves and cucumber)
• Smoothies (Mint leaves with mango, pineapple)

• Mint Chutney (Mint leaves, coriander, chilli/peppers, garlic, lemon juice)
• Mint Yoghurt (Mint leaves, yoghurt, lemon juice, salt/pepper)
• Mint Salad (Spruce up your boring tomato/onion/cucumber/carrot salad with mint leaves)

• Mint Rice
• Mint Chocolate
• Mint Syrup (Caramelise mint leaves with brown sugar)
