Office 365 Word/Excel (One Drive) collaboration question..

Hi guys, for those who are on Office 365 for Business, we are in the process of looking to move our current setup (company documents) from an on-site server to Office 365 OneDrive. Now the single question that I can't seem to find an answer for, let's say for instance two users (Onedrive app is installed on both users desktop) and they access the same file WHILE BOTH does not have a internet connection, make their changes to this Word/Excel document and save it.. two hours later the internet is back on and the app synchronizes with the OneDrive cloud - question is, what version does it save or which one gets overridden or how does this setup works?

The reason for asking is that if me and my boss both work on excel sheet with our prices, mine differs significantly from his and later on when it is synced we are unsure which copy will be saved and more importantly how do we ensure the CORRECT copy get saved? (apologies for the "beginner" language)

Some feedback/explanations would be greatly appreciated thanks!
 
Don't use Office 365 but doesn't it offer track changes like Office 2007?
 
I know with my normal OneDrive on two different machines, if I access the same document on both machines offline, OneDrive will save two versions and append the computer name to the end of the filename. I'm sure OneDrive for business would do the same.
