Many years back my mom bought one of these - Windows 8 / Intel i3 / 21.5" Touch screen / 1TB HDD / DVDRW.

You think it's worth much to get rid of ?
R1,500 - R2,000 ?

I reset it for her back to the Windows 8 it had - but was worried about going to Windows 10 because of the touch screen drivers. So it's pretty much factory reset.

2k is reasonable. Those specs aren't bad. RAM? If I bought it Id stick a 128gb SSD in for the OS.

She actually also had a Dell all in one that was horribly slow and she was going to flog it.

She gave it to me to read the specs and I decided to add a 240GB SSD and a full on clean install (no Dell bloatware) - when I gave it back to her, she couldn't believe the difference and it's now her day to day PC

Absolutely. SSD is the single biggest speed boost on any modern system with an old HDD.
One thing about AIOs is the touch screen drivers as you suggested don't always exist for Windows 10 but I wish they were more commonplace, they make a lot of sense in place of a box and monitor and are far more pleasing to the eye.
Check if there is space for another RAM stick or if it supports a single 8Gb. That would be relevant for a sale IMO.
