Does anyone have any decent recipes for pasta with vienna sausages in? A friend of mine's mom use to make a white-sauce based pasta with sausages in that was really good but I don't know the recipe.

I know I can just make spaghetti bolognaise and chop the sausages into the sauce, but that seems so boring. Anyone maybe have an easy, preferably not overly expensive recipe for something like this? I promised someone I'd make pasta with vienna sausages in for tonight but I'm a little stuck on what to actually make.

Slice sausages and put under a grill to caramelize for a bit, any pasta sauce you can make/buy, throw together while piping hot and you're sorted.

Viennas are quite a boring sausage... Well, hm... I think I'd do something with a homemade marinara and white wine. You can't overload the flavours too much because the sausages are very light and they'll get drowned. Perhaps grill some vegetables like yellow sliced peppers and courgettes in olive oil and add them at the last minute.

So here's what I'd do, just from the top of my head:

Marinara sauce:
Fry onion and 2 cloves of garlic for 10 minutes in butter or olive oil till sweated and transparent
Add a tin of tomatoes and a cup of chicken stock, and a squeeze of lemon juice.
Simmer down for another 10 minutes on a medium low heat
Blend with a hand blender
Add a good glug of worcestershire or fish sauce, chopped fresh parsley and origanum.

Then in one pot, cook pasta and drain when finished, and toss in some olive oil and fresh garlic - time this so it's finished at the same time as the viennas.
At the same time, take your sliced vegetables and lay them on an oven tray, drizzle with oil and season with salt and pepper, and grill or broil for 5-10 minutes.
In a pan, chop and fry the viennas gently.
Add 1/2 cup of white wine and cook down for 5 minutes.
Add the marinara and cook for a further 5 minutes
Add a handful of chopped fresh basil and 100g parmesan, and pinch of sugar.
Mix in with the pasta pot, stir in the vegetables, and serve.

I have never made it as a full pasta dish only as a lunch meal with 2 minute noodles.

What I do is cook the 2 minute noodles in the microwave then get a pan going where I fry some onions, viennas (and whatever I can find that I want to add like bacon, ham, mushrooms etc etc) then make a simple white/cheese sauce also in the microwave and mix it all together in the pan before eating.

My argument to get it past the wife as not being fast food like burgers and hotdogs.
Its good for them. And easy to make - compared to a nasty trick like the Cauliflower Pizza Base.

It is fast food in every possible sense. There's no vegetables, no preparation, your 2 ingredients are both heavily processed, it takes about 5 minutes to make, and it tastes of nothing.

Thanks, I'll give this a try. What's the best way to fry the viennas? I've tried before and they just pop oil all over the place. even on a low heat.

I would have loved to use nice ham or decent sausages instead, but it's sort of a bet on whether I'd be able to make a decent pasta with vienna sausages (inspired by Big Bang Theory, of all things).

Thankfully my basil plants have grown crazy lately so I can just grab some leaves there. I don't have a lot of experience with tomato-based sauces, so that will be very new to me.

You could also try what someone suggested above and grill them with the vegetables, and then simply add them to the sauce. Seems like a good idea and healthy.

My basil plant got killed in the heavy winds recently :( thankfully my neighbour has a healthy... erm... bush :erm:

hahahah,

viennas, baked beans, pasta go very well..

but the baked beans needs to be cooked properly ie: a spicy aromatic tomato chutney/sauce made first then u add the baked beans to it and let it simmer until the "tinned taste" is gone. then u can add the cooked sausage/vienna to the baked beans and take it off the heat. spoon that over your pasta, a bit of cheese.
