PC or Mac

How about the F2 function to edit a cell in the windows version. Still don't know what the mac equivalent is.

In Office mac, it is "ctrl + U"

I agree that learning the equivalent shortcuts must be the hardest part of switching.

However most of the built in mac shortcuts are much better than the windows shortcuts, and within easy reach.

mac vs win
cmd + tab vs Alt + Tab
cmd + Q vs Alt + F4 (on mac, can be pressed whilst app icon is selected with cmd + tab)
cmd + W vs Ctrl + F4
cmd + H vs (windows equivalent?) (on mac, pressing it whilst app icon is selected with cmd + tab, will hide selected app)
cmd + ` vs (windows equivalent?) (on mac, it cycles between windows only within activated application)
cmd + space vs win + R or simply win on win7 (on mac, it remembers what you typed previously, and learns from your previous searches. And you can reveal indexed search results by pressing cmd + R (windows equivalent?))

copy, cut, paste, and undo are the same as windows, except they use cmd instead of ctrl. Which is an easier reach IMO.

edit:

And if the tab key is set to move focus between all controls, then when you have a dialog box, you will normally have a highlighted option, (which you can select by pressing enter, or return) and you have an outlined option, which you can select by pressing spacebar :) niice
