PC upgrade incoming and need advice

Not really - the extra bandwidth from triple channel RAM doesn't really make much difference at all. A Core i7 860 & P55 motherboard will probably be faster. The i5 750 is the best bang for buck, particularly if you overclock.

That said, the i7 920 & 930 are the best overclockers of all, and you get support for the future 6-core chips from Intel.
 
You must decide what you want, value for money, or the best performer. You cant have both. AMD = amazing value, losing only by a around 10% less fps in games to a i7. But obviously the i7 will beat it every time, especially in synthetic tests, for 25% more cost for the CPU alone.
 
At stock speeds it's i7 920 < 860 < 930

The i7 930 is SLIGHTLY better than the 860 at stock speeds. Intels 6 core CPUs are wayyy overpriced and there's no real world benefit from running triple channel memory so i wouldn't choose the 1366 platform just for that.

If you have the cash to blow go for the 930 by all means, otherwise I'd get a cheap mobo + i7 860 + good gpu OR cheap AM3 mobo + x4 965 + good gpu. AMD is also going to release affordable X6 CPUs soon, so you might want to upgrade to that later on
