Only one person (that I know of!) has mentioned to me that when they receive my emails, they get a message that the email is emanating from an unsecured site - or something to that effect.

What can be the issue and what can be done?

I am guessing the receiver is using Gmail and sees a red (no encryption) icon when they get a mail from you, see:

It means your ISP / mail provider is not encrypting your email when they deliver it to Gmail. This means your email can easily be intercepted, or the contents altered.

Further issue!! I chagced my setting to "encrypt contents for outgoing messages" but then when I send an emaiil, I get a message saying "MS office cannot sign or encrypt this message because your certificate is not valid".

Can anyone please help?

You are trying to encrypt the message from the mail client.
Whilst not a bad idea it would be much simpler getting your ISP to do their job and encrypt mail delivery.
Who is your email provider?

MWeb

The problem with MWEB is related to their handling (non-handling)? of e-mail policies.

Some of their mail servers are seen as relay servers or just "unknowns", this causes other mail servers to view them as "suspicious" = mark all mail as spam/trash/suspicious.

MWEB needs to spend some serious quality time reviewing their Sender Policy Framework (SPF) record(s) and relays.

When mailing them we repeatedly get NDR's for email addresses that do exist on MWEB and some of their clients can repeatedly NOT email us at all, or we we get the mail and it's marked as Spam/Trash.
