Got some thinly sliced pork goulash(sp?). How would you make stew with it

Don't think I've ever eaten pork stew - didn't even know there was such a thing. Could be a tasty dish though. . .

My wifes porchagoose grandmother used to make the most disgusting pork stew. Here is the recipe (from what I could deduce)
1kg pork fat.
200g pork meat.
3 carrots.
A Gemsquash
various chicken bones.
peas, whatever you've got.
1 onion cut in half.
1 lt of water.
Half a big bag of salt.
Bang it all in the pot, from frozen if possible (its better if the pork and the peas have been frozen together for a few years).
Boil the crap out of everything until the pork fat liquefies.
