Long story short - The developer of my current POS software passed away. No further support available.

Can't you change to an existing off the shelf POS product?
Trying to build a new product from scratch, even if you know exactly what you want and how it must work, is going to cost you a lot more than you think and it will take years no matter how much money you throw at it.
I've worked on POS before and I've brought another product to market. If I think about my cost and time estimates in the beginning, I was off by a multiple of 10.
A better option would be to use an existing product and pay for the customisations you need.

Is the existing software tied into any critical things on your side?Or is it standalone?
