Can you leave the decision to the executors of your will to choose charitable organizations as beneficiaries of your estate if all your named beneficiaries predecease you?

Sure - they are there to execute your instructions

Just make sure you frame it as such.

Mine leaves everything to my my kids but in the event of all 3 of us passing then it goes to my brother-in-law or his children (in that order).
