Yes, coolant will run out. Put a bucket under, collect it and re-add it when you've reconnected the hose.
You may well get airlocks.
Not sure if you have a radiator cap. If so, fill the radiator up through the cap, then close it.
Fill the expansion bottle to the max mark. Squeeze all the pipes, keeping an eye on the bottle to ensure the level doesn't drop too much. Top up as needed.
Then start the engine. As the hoses warm up (may take a few minutes for the engine to get hot enough for the thermostat to open) do the hose massage thing, topping up the expansion bottle as needed.

Not as far as I know. G12 and G12+ are both pink.It won't be disappearing because of lack of antifreeze. You have a leak somewhere.
Make sure if he's draining the system that he does a good flush too.
VW antifreeze is orange...

Many cars also have a air bleed valve on the engine side where the top pipe connects.
