I have the Gigabyte UD3R X58 motherboard.
I thought when I bought the RAM it was triple channel and now see it is not. It is already some time ago so cannot take it back

Is there really such a difference between triple channel and dual channel RAM?
This is what I have in there:
2GB (2048MB) Module PN - OCZ3G1600LV2G

Lol, researched this topic myself recently and apparently there's no real world difference between Dual and tripple channel.
 
Dual channel = 2 identical sticks for double the memory bandwidth.
Triple channel = 3 identical sticks for triple the memory bandwidth.

You can upgrade to triple channel by adding another 2gb stick in there. You won't see a huge difference though in real-life performance, though, check Anandtech's benches: http://www.anandtech.com/show/2658/5
 
CPU-z will tell you if your motherboard is making use of Triple Channel or not in the Memory tab.

If you're going to add more memory, just make sure that the voltage (eg. 1.65V), speed (eg. 1600MHz) and timings (eg. 9-9-9-24) are the same.
