So in order to get out of helping my missus clean the house and dishes and windows, I've negotiated a deal whereby I cook supper each night and she'll do everything else. The problem is, I haven't cooked in 4+ years :o

Can you guys and gals share some of your most delicious recipes with me? I particularly want to learn how to make tasty sauces, because then even if the meat etc. suck, I can just add some nice sauce and save the meal. Cunning.

Please share.
 
I made this a couple of days ago:

Mexican chili potatoes.
1) peel and cut potatoes into chunks, then boil until soft but still firm.
2) when done, shake around in a colander to get the edges fluffed out.
3) meanwhile fry the following together in a pan on medium heat: onion, chili, cayenne pepper, cumin, garlic - until browned and aromatic.
4) add potatoes to the pan and fry together in olive oil.
5) serve with white yoghurt or sour cream.

thats what i used to do but keep the peels as they crispen and i enjoy it that way

and this can be eaten with anything ..
 
im not sure OP if you like fish ..but a very simple recipe with fish is i marinate fish with salt pepper lemon garlic and abit abit of maybe chilli or something

and sometimes add this green masala my mum makes ...has like coriander mint and stuff in it ...

but yeah just throw fish in pan add fresh cream and let it cook

comes out devine ....simple and quick
 
Simple and tasty "Thai Green Curry"

4/5 Skinless Chicken Breasts
1 Tin Coconut Milk / Cream
1 x Mange Tout Peas / 1 x Sugarsnap peas / 1 x Yellow Patty Pan / 1 x Green Patty Pan / 1 x Baby marrows (any combination you like)
2 x Lemons (Or lemon Juice)
1 x Ina Paarmans Coriander Pesto / 1 x Ina Paarmans Basil Pesto / 1 x Green Curry Paste (your choice (I like "Blue Dragon)
1 x Large onion (optional)
Seasoning

Prep:

Cut the chicken breasts into cubes / slices
cube / slice the marrows / patty pans.

In a hot pan, fry up the onions with a bit of garlic (optional) and then add the chicken pieces.
I add some green onion spice (Ina Paarman) and half a lemon's juice

Once your chicken has turned white, add the veggies (patties or peas) and the tin of coconut milk / cream (cream makes a thicker richer sauce)

Add second half of Lemon juice.

Boil up Jasmine rice or Basmati rice (half a cup if only two of you) (don't forget to add salt to your rice otherwise it will be bland)

Turn down the heat on the green curry sauce (from say 6/5 to 3/4) depending on your stove heat.

Let the curry simmer until the rice is done.

Serve with a squeeze of lemon juice and fresh coriander (if available).

if you make it in bulk, it freezes well and goes a long way

Thanks, we love potato and I might try this tonight.

Surely someone knows how to make a killer base sauce?
 
By base you mean a white bechamel sauce? That is very very easy to do. Just heat flour and milk over a very low temperature in a pot stirring frequently to keep from forming lumps. That's the essentials of it.

you dont make a base for sauce with the flower and butter ?...

for mushroom sauce normally i just cut up mushrooms ....throw in pan and saute with butter and add salt and pepper ...add cream and cook ..very rich

or you can do it the white sauce way ...my aunt normally throw little flower and butter till it forms a paste ...then lets it simmer until it like breaks abit then adds milk and then as cerebus said you need to stirr frequently ...and then add abit of cream and mushrooms

for pasta ..i normally buy the pasta cook in sauces ...very good and easy
 
my pasta recipe

250g nice pasta (used a nice big italian screw-type which I found at Checkers)
250g pkt Joostenberg bacon rashers, those nice straight ones (or plain old streaky, but not back or shoulder!), diced,
125g mushrooms sliced
1 tin tomato/onion mix
half an onion chopped
12 black olives halved and pipped
5ml dried origanum
5ml dried marjoram
5ml dried basil
1 large red chilli, chopped
4 large cloves garlic, sliced thinly
about 1/3 of a cabanossi sausage, sliced (chorizo would do at a pinch!)

mature cheddar grated
spring onion chopped
nice extra virgin olive oil
freshly ground black pepper
freshly ground rock salt
red wine
white wine

pour a glass of red wine for yourself and put on some mellow music.
cook spaghetti till al dente, drain, stir in a little olive oil, season with rock salt and ground pepper and set aside in the big pot it was cooked in.
empty tomato/onion mix into a smallish pot with herbs, add red and white wine to taste, simmer gently.
fry bacon and cabanossi gently enough to render the "oil" out of it, until very crispy, keep "oil" in pan, set aside bacon and cabanossi in a dish lined with a paper towel.
gently fry onion, chilli, garlic and mushrooms until it looks really good, then deglaze with a small amount of white wine, then add to the tomato pot, adding more white wine if necessary.
add bacon and cabanossi and olives to tomato pot, then pour the whole lot over the pasta, mix gently but well.
transfer to a microwaveable dish and microwave till hot.
serve with cheddar and spring onion to garnish to individual taste at the table.

You left out the butter. Make roux with flour & butter and then slowly mix in the milk.

I love cooking, but the amount of dishes generated while doing it is enough to make me try for simple one-pot meals.


Sauces - you can always learn to make the French 'mother' sauces, which are supposed to be the basis for many variations, and impress the socks off'f her ;)

She does the dishes :D The plan is to impress her so much that she thinks doing the dishes is the least she can do.
 
here is my own pasta recipe.

1 punnet of mushrooms
1 medium tomato - chopped
1 medium onion - chopped
1 green pepper - deseeded and diced
1 packet of diced bacon
dash of salt, pepper and mixed herbs.

fry together till cooked. add white sauce mixture as directed by me - mix together about 2 tablespoons of flour into about 500 ml of milk. pour this into the tomato, mushroom, onion etc mixture and stir till thickened. add cheddar cheese, taste to your liking.

serve with spaghetti and voila you have a meal in under an hour. it is delicious.
 
Delicious Jamie Oliver pan baked chicken recipe.

This is a simple pan-baked chicken dish - the sort of food I absolutely love to eat. As everything cooks together in 1 dish, all the beautiful flavors get mixed up. This is what it's all about! With a green salad, it's an easy dinner.

Ingredients


1 3/4 pounds new potatoes, scrubbed
12 boned chicken thighs, skin on, preferably free-range or organic
Olive oil
Sea salt and freshly ground black pepper
1 1/4 pounds cherry tomatoes, different shapes and colors if you can find them
1 bunch fresh oregano, leaves picked
Extra-virgin olive oil
Red wine vinegar

Put the potatoes into a large saucepan of salted boiling water and boil until cooked.


While the potatoes are cooking, preheat your oven to 400 degrees F. Cut each chicken thigh into 3 strips and place in a bowl. Rub the meat all over with olive oil and sprinkle with salt and pepper, then toss.


Heat a large frying pan, big enough to hold all the chicken pieces snugly in 1 layer, and put the chicken into the pan, skin side down. If you don't have a pan that's big enough, feel free to cook the chicken in 2 batches. Toss and fry over a high heat for 10 minutes or so, until almost cooked, then remove with a slotted spoon to an ovenproof pan or dish.


Prick the tomatoes with a sharp knife. Place them in a bowl, cover with boiling water and leave for a minute or so. Drain and, when cool enough to handle, pinch off their skins. You don't have to, but by doing this they will become lovely and sweet when cooked, and their intense flavor will infuse the potatoes. By now the potatoes will be cooked. Drain them in a colander and lightly crush them by pushing down on them with your thumb.


Bash up most of the oregano leaves with a pinch of salt in a pestle and mortar, or a Flavor Shaker if you have one. Add 4 tablespoons of extra-virgin olive oil, a good splash of red wine vinegar and some pepper and give everything another bash. Add to the chicken with the potatoes, the tomatoes and the rest of the oregano leaves. Toss everything together carefully. Spread out in a single layer in an appropriately sized roasting pan, and bake for 40 minutes in the preheated oven until golden.


Lovely served with an arugula salad dressed with some lemon juice and extra-virgin olive oil, and a nice glass of white wine.

I think I would rather my girlfriend do the cooking and I will gladly do dishes. But my GF has also started asking that I help cook now and again. I cook curry, stir fry and fish. Check another thread for the curry recipe (you can get really creative) and also the stir fry is awesome because you can play with different veg.
