The inverter will have auto bypass switching. Off grid just means it does not feed into the grid

12 x 390w panels = 1800 x 12 = 21,600
8KW Sunsynk = 32,000 (far better than the doesn't have an NRS cert, so isn't legal to use on grid Axpert)
5KW battery = 25,000
=78k or so.
Add in cabling and mounting - 5k odd, and you can do it for well under 90k yourself, including vat.
Suggest let us know what area you are in, so we can advise, as different area,s and muni's have different laws/requirements, even for completely off grid (i.e. Cape Town still wants a CoC and engineer signoff on offgrid..)
