What you can do is remove all of them an etch them in with a stencil, like so.

First time you deep/pan fry something, the oil splatter will lift it..

I hope you realise that you do not get Letraset anymore? I tried to get hold of it some time last year and made that discovery. You will even struggle to find any generic dry transfer lettering anywhere.

Take a Dremel tool and engrave numbers by hand, the result will most probably not look very professional but at least it will take away the guessing problem.

Or get some small number punches and punch the numbers into the metal, but beware the sheet metal dents easily.
