Roku 3 with Plex - poor video quality

I just installed plex on my newly acquired Roku 3 as well as on my Mac Mini core duo (old I know) with snow leopard. The video quality when streaming my movies and tv shows results in really poor quality. No matter what video settings I have on the Plex server or Roku I just can't get it above what looks like 240p!

Any help would be greatly appreciated.

Is the mac the server? What are your source files?

The mac is the server and the files are divx avi files mostly and some mp4s. I know that the Roku does not natively support this file type (mp4 and mkv only methinks) so the mac has to transcode . The connection is wired from Roku to router and wireless to mac mini.
