The cheeses which are sent for sale to the consumer as fresh (a term which may sound curious for a product which has been maturing for a year) will have parallel lines engraved on them which render them immediately recognisable by the consumer.
This is the second class of Parmigiano-Reggiano called “mezzano”.
When the cheese has matured for 18 months, the mark "Extra" or "Export" can be added. A system of coloured seals help the consumer identify the level of maturation of the pre-packaged products available in retailers.

Parmesan yes. Maybe just take the edges off with a potato peeler before you eat it.

Cheddar does not last very long past its sell by date depending on where it was packed in the fridge (i.e on top near the warm air and lights), but when it goes off it will start to inflate the packet a bit. The most important thing that I have discovered is to keep everything sterile. I either use disposable gloves or the packet to handle the cheese. I grate it and put it into a dry, bleached tupperware. Lasts for weeks.

Does not state that 29/05 is the use by date, so I would nuke the heck out of that...

It will be fine. Grab some figs and / or other preserves and chow.

Or sprinkle over pizza / pasta / breakfast cereal.
