Salads

I heard this on RSG as I was flipping through channels on my way back from work. Heard the lady said that the grapes takes on a raisin like texture, not a fan of cooked raisins so I think I'll give it a skip.

I bought red seedless grapes. Left it in the oven at 200C for probably about 20minutes and it still looked like normal,grapes to me. So n put the grill on for about 5 minutes. The end result texture is more like canned grapes, in other words it looks like grapes but its just a lot softer and sweeter. Not tough like raisins at all and also not like dried prunes.
 
Couscous is very easy. 1 cup of couscous to 2 cups of boiled water, or stock. Pour in and let it sit for 10 minutes, then fluff and add the rest of your ingredients.

The other day I did a grilled watermelon salad that I posted on the forum:
Cut 3 rounds from a watermelon. Place rounds on grill plate and grill each side for 5 minutes. Dice into 1-inch pieces.
Drizzle with balsamic reduction
Sprinkle a brick of feta on top.
Add mint (although in hindsight I'm not sure I like mint...maybe coriander leaves would have added some pepper to it), salt and pepper.

Interesting. I always have extra watermelon left over if I buy so will try the grilling.
 
Deconstructed Tomato and Mozzarella cheese salad.

Refreshing and tasty finger-food which is great for braai's that is quick to make.

Ingredients

1. Medium sized firm tomatoes
2. Mozzarella cheese
3. Fresh basil leaves
4. Basil pesto (optional.)
5. Salt and pepper to season.

Cut refrigerated tomatoes in half around the equator (You know what I mean)
Scoop out the inside seeds.
Place a large basil leaf in tomato so it sticks out like a jaunty little feather in a cap.
Stuff with grated cheese.
Add a dollop of basil pesto.
Salt and pepper to taste.

Tasty.
