Service intervals and what needs to be changed

I have a second hand Fiesta (2007). Unfortunately the car didn't come with FSH, not even the service book. The car only had 30,000 on it when I got it, and apparently the service interval is every 20,000km or 1 year.
I have taken the car to Bosch twice to be serviced, that's once a year as it doesn't do 20,000 in a year. I have noticed that they usually just do an inspection and an oil change service. My question is how often should things like the oil filter, spark plugs, fuel filter etc be changed. The car is due for a service soon and I would like to make sure everything is done that needs to be done. I also have no idea about the cam belt on this car, but will get them to check it out.
 
How do you know the service interval is 20k? It's not impossible, but it's generally lower. I don't have any knowledge of the Fords specifically though

Oil and Oil filter go hand in hand, so they should be doing that every 20 000, spark plugs I think is about every 60k. Air filter should be done every second service or so.

Also have a look over here, it's for the American market, but should give an indication. All of their intervals are every 12500 though.

EDIT:
12500 is probably miles though, so 20000km is fine.
