So this is frustrating. I want to buy a little N40L Microserver, upgrade the RAM, add a display card and install Windows 8 on it then use the setup on my mounted 47" LCD screen so I can easily browse my network, play movies etc.

Now I'm not a big fan of remotes and wireless keyboards, mice etc. so the perfect solution would be to have a little touch screen that works with Windows 8. Why is there no market for these things? Surely I cant be alone?

Something like the AOC Portable Series 15.6" USB LED Monitor (but with touch screen support) would have been perfect but I can't seem to find anything remotely like it.
Does anyone here have any ideas?

Use a tablet with some remote software on the wifi network (e.g. Unified Remote)?

Just make sure the app allows you to remote in at 1080p else the screen will resize when the remote connection is made
