Sorry if this sounds dumb, but I'm useless regarding this.

So the Huawei CPE X is conveniently right above the room of where the home PC's are located. In the past we had to use wifi dongles to be connected to the internet. Now with this we have the chance to connect the PC's with ethernet cables again.
Now my question is what can we use to split the single ethernet cable coming from the port into 2 different ethernet cables for the 2 PC's. I did google it but received mixed answers.

You need a network switch. plug the router ethernet cable into the switch, and then the different pc's into the switch.

Gigabit is rated for 100MB/s, if your downloads are exceeding 100MB/s you would need a 10 Gigabit switch..
and 10Gb NICs in the PCs and on the router - unlikely.

The theoretical limit for 5G is much higher than 1 gigabit but there is no way you are getting speeds like that.

The LAN port on your switch is 1 gig so either way - that's your max speed.
We receive around 200-300 mbps with the 5G. So with the switch we will only receive 100mbps for each pc?

you using wifi so with all those devices you not getting anywhere near the speed of network cable
Indeed. With the current cable on the one PC we receive those speeds. With the wifi it is between 100 to 150.
