I am going to quote this part as it is exactly my issue:

Everyday, without fail, my ping literally increases from 30ms to 500ms+ (going up to 1000ms and being completely unstable)

Hi, we had the same problem for about the past week now, the problem is caused by congestion at the exchange (you are probably on Honeydew exchange, same as us). The problem usually starts around 6 PM and lasts into the early hours with pings rising to between about 600ms and 1900ms for local traffic.

So far though, it looks much better today, so maybe they actually fixed something.
