In most supermarkets the bakery section has a few trays of cakes and doughnuts and whatever. How long would you say is a reasonable period of time for a slice of cake to be on sale at its original price?

Depends on the supermarket tbh..
I've come across one or two that actually do a pretty decent fresh baked cake.. but they're on order only, not just lying around on the counter.
Some Super Spars have daily delivered cakes made at home by some Tannie who knows what Chocolate Koek is meant to taste like..

Why would you even consider buying old cake?!
I know, it's awful stuff. What I'm wondering is more about how much you'd trust a retailer that will do something like charge R18 for a slice of cake that's been sitting out for a week, in what other departments is this kind of rip-off popular even if not evident and how many other kinds of rip-off are they working (in addition to the industry standards of course)...
As far as I'm aware they don't offer taste sampling. How are you meant to know by looking at it?
The Euro Spar in Three Rivers has the best bakery I have seen in a long time. I really have to contain myself or I can easy drop R1K there.
