Sorry. Work has been insane. Course was brilliant. My sister went on a course a while back at Blackanese or something and it consisted of them watching the chefs making it while making comments. This was very different. It was a nice setting at the Smeg offices in Brynston and it was very proffessionaly run. Deon Mastenbroek was the organizer and was there at the beginning before handing over to the husband and wife chef team who would demonstrate how to make each course and then allow you to try. It was amazing to see how when people struggled they would pull out new ingredients and let people try again until they got it right. Really was good practice under the eyes of some amazing chefs. They started with Maki, then did hand rolls, and finally did Nigiri. During one of the intervals I asked Gerard, the one chef about a tip or two for making fashion sandwiches and he quickly showed it it me and helped me understand how to do it. We got to eat all the sushi we made and take any leftovers home. I seriously figured out what I had been doing wrong (I have tried about 4 times in the past with limmited success).
I would highly recommend these guys. Sounds like the next course will be based more around baking but they do rotate and Sushi will come up again. Its run by the SA culinary club. I asked Deon before we started if they only work via Groupon or if there are other courses available and it seemed that for now they are mainly working via Groupon but there was a newsletter that one could sign up for as well.
Anyways, this weekend I stocked up on my Sushi supplies and as soon as I get some time again I want to practice all that I learned there. I figured youtube tutorials would make courses like this obsolete but having a proffesional watching what you do and pointing out simple mistakes and making those little suggestions makes a huge difference. Like I said, I tried at least 4 times to get sushi right and never did, the course has given me a lot of confidence that I can now make decent sushi at home.
