I agree it's rather pathetic if you look at the options available to you and why is there no option to remove the operating system if you do not want to buy it?

Exactly. Nothing is stopping anybody from designing their own. The feature isn't there for people who want to nitpick about what they want in their systems, but for people who just want to buy a cheap, already assembled system with all of the basics.
It's a great feature and I'm sure they'll expand it in the future now that their website is capable of this feature.

Option should be there to remove OS since not all make use of M$.

Note, that this is different from our previous PC Builder we had years ago that was just listing components. With the new PC Builder the computer is assembled and tested by our supplier. Windows is needed so they can run their testing software.

This is mainly aimed at making it easy to buy a computer that you know all the components are compatible and working together. Just a few clicks and you have a working PC delivered to your door.
 
But it really is an odd PC Builder: you go from cheap to a bit more pricey cheap and a jump to quite expensive (three times more expensive than the mid-range PC).

I really liked the old one. Why was it changed? I understand the need for an 'easy' one for non tech-savvy users but what about the rest of us? :)

You can compile your own by just reading the parts' names. Stop being lazy! :p
 
We have now added another model in the line-up to make the gap between the midrange and the top performance computer smaller.

We have also added an option to buy the computer without Windows.
