Tasty and Easy fish cakes

I made Thai fish cakes just the other night - they were delicious, but when it comes to this sort of thing, I work on taste and touch and not specified quantities. Here's how I make mine:

Mixture of tinned salmon and tuna that I coat in coconut cream.
Add the following (and be liberal with these all):

Chopped Thai chillis
Garlic
Ginger
Lime juice
Lime zest
Sugar
Fish sauce
Basil
Coriander
Salt
Egg (as a binder)
Breadcrumbs (to soak up excess liquids, enough to form balls)

I then coat them in a mixture of coconut flakes and bread crumbs and fry at a medium temperature. They are absolutely delicious. The trick when you're adding these is that Thai food is all about very strong flavours, but balancing sweet, salty, sour and hot. Remember that and you won't go wrong...
