Met Apiwe in person ("fanboi") moment and we shared my sorghum inspired wit (a homage to her) was one of the most awesome experiences in my home brewing career! A really wonderful lady and doing great things for our craft!

She has a legit passion for brewing! I was sad when she had to close her brewery due to covid.

Talking about closed breweries, when are you doing your next brew? I take alot of inspiration from your micro experiments!!

Yeah, was very sad. Glad Tolokazi Brewery is up again and making waves from what I can see. You can she, she is busting her ass to get things out there and make it work - wish her every success!

With the solar installation that took place the panels were blocking all my beer making equipment. I have the smoked smore porter and fruit cake ale to bottle, they will be ready to drink Christmas. The rest of the bottles will be stored for years to come. The smoked smore porter is around 9% and fruit cake ale is 10-11%

Need to bottle this week they been in the fermeters about 1.2 months now.

Managed to fine the beer today and pop some in the sodastream.

I present the smoked s'more porter (essentially a imperial dessert porter)

Notes of rich dark chocolate, a mild sweetness (not overwhelming at all), a touch of smoke. Very nicely balanced. Will see how this ages - will have a bottle Christmas then again next year. Its pitch black.

And fruit cake ale - this has ginger, cinnamon, pineapple and cherries in.

Beautiful deep red color, spicy and fruity a seriously delicious beer.

Both will be stored for years to come want to open two bottles a year for next 4 years.

That porter looks like more, thick head on the porter looks like a slice of bread.

I agree about the fruit cake ale, I love that nice red color on it.

Well done and thanks for the update. I can imagine its been a crazy month with the solar farm.

Your smore makes me feel like making a oaked RIS, thanks for the inspiration

Thanks! I am going to try source a small barrel next year. If I cant get the barrel will use some pieces of wood which is easy to find but second prize.

Remember dont rush the big beers take your time and plan to store them for a year plus, will only get better with age..

Ive done a bit of research on barrels as I wanted to do the same, the problem with small barrels is surface area, extraction of flavours happens in hours in the small barrels. In a 25L barrel it takes days to weeks to get optimal extraction.

Alot of guys wax some of the staves to limit oxidation and extraction.

Give it a read and let me know what you think, I really want to have a barrel for sours and one for oaked beer, but not sure what the best way is.

We should probably move this to a diffrent thread haha.
